Big restaurant and even a house wife tend to use monosodium glutamate to enhance the flavor of the food they make. It is the sodium salt of glutamic acid, one of the most abundant naturally occurring non-essential amino acids. There are some trade names of monosodium glutamate including AJI-NO-MOTO, Vetsin and Ac’cent. Actually, the pure MSG does not even have a satisfying taste if it is not combined with a consonant savory smell. MSG improves the taste of food if it is used in the right concentration thus an excess of MSG will ruin the taste of a dish. It mixes well with fish, poultry, meat, sauces, vegetables and many other foods. MSG also can be used to reduce salt intake that makes hypertension, heart diseases and stroke.

            MSG has been employed safely for not less than 100 years for food seasoning. Moreover, various studies also have been conducted to elucidate the benefits and the safety of MSG. International and national bodies for the safety food additives mull over MSG safe for human consumption as a flavor enhancer. Then, additional studies to prove that MSG causes obesity or not are also conducted but the results are not clear enough yet.
